A journey through the French Culinary Institute's


In this blog, I am going to plow through this book, hopefully at a pace of a recipe a week. The purpose is to enhance my skills, learn some tricks from the Master Chefs at FCI and then pass those along to you, the constant reader. I'll provide photos of each step along the way so that you can see exactly how I am doing what I am doing (and tell me what I'm doing wrong!).

The goal is to master each recipe, not simply complete it. I hope that if you have any tips and techniques, you will share them with us.
